Application note #2 - how to set up a networked system to monitor freezers and refrigerators in a food preparation environment using Kooltrak Professional, Koolprobe Standard and Koolpad.
This requirement applies to public restaurants and hotels, company canteens, hospital kitchens, and similar situations.
There are numerous requirements for temperature control in food preparation. Storage in refrigerators and freezers must obviously maintain target temperatures, and in addition prepared food ready for service must be maintained at established minimum temperatures to prevent bacterial contamination, and heating and cooling rates for products like soups must meet requirements.
Numerous disasters involving large scale food contamination and the resulting financial consequences for the organization involved point up the need for improvenment in this area. Apart from the desirability of not poisoning the guests, increasingly detailed legislation makes it necessary to be able to demonstrate regulatory compliance when inspected.
Kooltrak's experience in this area as a supplier of temperature logging systems is salutory, and we are suprised indeed at how few major problems seem to occur given the disastrously poor temperature control we often observe. While we are not going to reveal details of any customer, there are certainly places where our staff prefer not to eat!
